After a valiant fight with leukemia, our dear friend and valued colleague, Craig Michalak died Monday, August 20th, at his home in Chapel Hill.  The loss of Craig will be felt by all who knew him and by many others who benefited from his selfless service to public health in North Carolina and across the nation.  Through his work, he developed deep friendships throughout the state and the nation and he will be greatly missed.  Craig creatively built and managed the North Carolina Local Health Agency Accreditation Program, the first such program in the United States.  The program he helped to build will serve as a lasting legacy to his dedicated service, and it will stand as a model for others across the nation to emulate.

Sarah Michalak has asked that a library fund be created in Craig's name so the Craig Michalak Memorial Library Fund has been established..  If you would like to make a contribution to this fund you may send your gifts to the Library Development Office at CB 3900 or you may deliver them in person to 239 Davis.  Checks should be made out to "UNC-Chapel Hill" with a note that it is for the Craig Michalak Fund.

If you would prefer to make a gift by credit card, you can do so online at http://carolinafirst.unc.edu/ . Click on "Make a Gift" in the upper right section of the page.  The first box will ask for a campaign code, type in RQA, select your gift option, then select "proceed" at the bottom of the page.  This will bring you to a drop down menu, and you should select "Academic Affairs Library" in the first box. In the second box scroll to the bottom and select "other," then type in "5961 Craig Michalak Memorial Library Fund."  Then follow the additional instructions to complete your gift. If you prefer, you can let the Library Development Office handle your credit card gift (following tight security regulations).  You may contact Sarah Poteete at 843-5660 to do this.

The UNC library folks will send the list of donor names to the family.

NCCPHP is working with the World Health Organization (WHO) Office for the South Pacific to provide basic field epidemiology training for public health practitioners in the South Pacific island nations. Curriculum development is underway on topics that include basic disease surveillance and outbreak investigation. Training materials are being developed to cover regionally-important diseases such as dengue, typhoid, leptospirosis, and measles.

On July 31, 2007, NCCPHP and WHO tested the training materials with 8 local public health practitioners in Suva , Fiji , to ensure that course materials were tailored to the specific public health challenges in the South Pacific. Participants included public health nurses, physicians, and officials from the Ministry of Health. Attendees listened to lectures, participated in interactive activities, and provided feedback on the training materials.

During their visit to Suva, NCCPHP staff members worked with WHO epidemiologists to review and revise the training materials. NCCPHP is currently making additional revisions to the training curriculum. The final project will be completed in the fall of 2007, and WHO will then implement the training in the South Pacific Islands .

Holiday Recipes

Annette's Banana Pudding
1 can condensed milk
1 can water (use empty condensed milk can)
1 small box instant vanilla pie filling
1 16oz container Cool Whip*
1 12oz container Cool Whip
1 box vanilla wafers
6 bananas*

Using a wire whip, mix condensed milk with the can of water until runny. Add vanilla pie filling, stirring with the wire whip as you go. Refrigerate until stiff.

Remove from refrigerator, add Cool Whip and mix well. Layer the bottom of your dish with the cream mixture. Add a layer of vanilla wafers and bananas. Repeat twice. Save most of your cream mixture for the last layer on top. Sprinkle with vanilla crumbs and add vanilla wafers around the top of your bowl.

*The original recipe calls for 2 x 8oz containers of Cool Whip and 3 bananas. You can vary the amounts of these ingredients and of the wafers.

Crystal's Pecan Pie
3 eggs
2/3 cup sugar
Dash salt
1 cup dark corn syrup
1/3 cup butter or margarine, melted
1 cup pecan pieces
Pie crust (I used Harris Teeter brand)

In a mixing bowl beat eggs slightly with a rotary beater or fork. Add sugar and salt; stir until dissolved. Stir in dark corn syrup and melted butter or margarine; mix well. Stir in the pecan pieces. Pour pecan mixture into pie crust and place on baking sheet. Cover edge of pie with foil. Bake in a 350 degree oven for 25 minutes. Remove foil; bake about 25 more minutes or until a knife (or toothpick) inserted off-center comes out clean. Cool on a wire rack. Makes 10 servings.

Michele's Cornbread
1 cup self-rising flour
½ cup vegetable oil
2 eggs (well beaten)
1 cup Sour Cream
1 cup creamed corn
½ tsp. Salt

Mix all ingredients together and bake in a greased iron skillet or pan at 400 degrees for 20-30 minutes.

(I like to heat my cast iron skillet in the oven as it is preheating with a little bit of bacon grease. Remove the skillet, pour the batter in and then bake).

Pasta Salad Recipe
1 package spiral pasta, cooked until tender, drained and cooled.
1 packet dry ranch or italian salad dressing (I use ranch)
1 small bottle Wish Bone Italian salad dressing.
1 med. red onion sliced
1 green or red bell pepper
broccoli flowerets
small squash
carrots

Use any kind of raw vegetable you like to add color. I have added diced
ham, & cubed cheese. Wash and cut veg. into small to med. pieces. Add
veg. and dry salad dressing to pasta and toss to mix well. Refrigerate
overnight. Before serving, pour small bottle of dressing over salad and
toss. Enjoy!

At the Stampin' Up! convention there were almost 4,000 demonstrators from all over the US and Canada. They spent a lot of time catching up with others that they only see once a year. Also a lot of time is spent card swapping. Amy stamped a bunch of cards and then swapped with other people so she came home with a variety of different cards. She swapped about 175 cards this year! Participants also go to business classes, seminars, and of course stamp with new stamp sets and products. Stampin' Up! is located just outside of Salt Lake, so they got to see their brand new campus which was very cool.

While our Institute marketing director has lots more photos from her March trip to Thailand, here's one of Bev taking a backseat on an elephant excursion through a rubber plantation to a view of Kata and Karon beaches in Phuket.

Rich Volz, "My daughter Megan is in Seville , Spain for three weeks taking an intensive language course for college. Her professor leading the trip is originally from Spain and all the students are staying with local families, so the trip will be total immersion in the language. The group will also be making trips to other cities in Spain. Her first e-mail home mentioned that Seville was a “lively” place."

Come to the third annual MOMArt art, craft and plant sale on April 29-30 at 1527 Pinecrest Rd. in Durham.  It is hosted by Just a Few Friends, a community spirit organization, to benefit the Exchange Clubs' Family Center of Durham, an organization that supports families and works to prevent child abuse.  The Institute's Liz Mahanna is a founding member of Just a Few Friends and creates many of the container gardens and a few of the crafts.

Just a Few Friends and the MOMArt sale was begun by a group of Triangle women's competitive frisbee players three years ago.  After retiring from competitive Ultimate, they started this art, craft and plant event every year to raise money for local agencies who work hard for the Triangle's disadvantaged residents.  Last year's show raised $10,000 for Urban Ministries of Durham.  The sale also showcases and supports local artists, including several from Chapel Hill and Carrboro.  In some
cases it is the first opportunity they have to show their work to the
public.  The show this year is Friday, April 29, from 7-10 pm (preview party and artist reception) and Saturday, April 30, 9am-4pm.  More details and directions on the web site, www.justafewfriends.org .
